Eric’s whiskey journey began over 20 years ago, sparked by a first tasting that left a lasting impression. That single experience ignited a passion - one that has only deepened with time.

In 2012, Eric co-founded the Ennis Whiskey Club with his brother-in-law, Paul. Together, they’ve been curating unforgettable whiskey experiences ever since.

In 2018, Eric made the bold decision to change careers and immerse himself fully in the whiskey industry. Since then, he’s had the privilege of blending award-winning whiskeys - some of which have been recognised at the prestigious World Whiskies Awards. His expertise has earned him a place on the judging panel for those awards and he is also a permanent judge for the annual Irish Whiskey Awards.

Today, Eric is a whiskey consultant who works closely with emerging whiskey brands, helping them craft innovative expressions that remain true to the rich tradition of Irish whiskey.

Through the Ennis Whiskey Experience, Eric continues to share his passion and insight - welcoming both seasoned enthusiasts and curious newcomers to discover the depth and heritage of our beloved spirit: Irish whiskey.

Paul

Paul grew up playing traditional Irish music in pubs around Ennis. As a youngster, he was captivated by the older musicians - how they’d end a night of tunes with a quiet, celebratory drop of whiskey. It was like a ritual, a way of honouring the music and the bond they shared. When he came of age, he joined them in that tradition. It was a moment that felt timeless - and it sparked a lifelong love affair with Irish whiskey.

In 2007, Paul founded his own drinks company, sourcing and supplying boutique whiskey and other spirits to a growing client base. Five years later, he and his brother-in-law Eric co-founded the Ennis Whiskey Club to share their passion for Irish whiskey with the local community. That mission expanded in 2019, when Paul, as a member of the Ennis Chamber of Commerce, launched the Ennis Whiskey Experience - an initiative to introduce visitors to the rich heritage and flavour of Irish whiskey. Since 2021, he has led a panel of whiskey judges for the annual Irish Whiskey Awards.
