Eric’s journey with whiskey began over 20 years ago during his first tasting experience, sparking a passion that has only grown stronger over time. In 2012, he co-founded the Ennis Whiskey Club with his brother-in-law, Paul, and together they’ve been curating memorable whiskey experiences ever since.

In 2018, Eric made the bold move to transition his career, diving into the whiskey industry full-time. Since then, he has had the privilege of blending award-winning products recognized at the World Whiskey Awards. Eric has also served as a judge for these prestigious awards, and continues to for the annual Irish Whiskey Awards.

Today, Eric collaborates with emerging whiskey brands to create innovative new products. Through the Ennis Whiskey Experience, he continues to share his expertise and passion for Irish whiskey, connecting with enthusiasts and newcomers alike.
