Sit and Sip

Irish Whiskey is steeped in tradition with a centuries-long history of distillation on the island of Ireland. From the highs of world renowned whiskey maker in the 1800s to early 1900s, decades of hardship and demise followed for the Irish whiskey industry. 1966 was a landmark year with the amalgamation of the remaining Dublin/Cork brands with their HQ transitioning to Midleton. In 1974, there was only Midleton and Bushmills. 1988 was another landmark year with John Teeling entering and disrupting the market with the development of Cooley distillery in Co. Louth. 2012 saw the beginning of a renaissance with the arrival of Dingle Distillery leading to 50+ distilleries in Ireland in 2025.
